Chapter 20

The blank plate sat between them for three days. Johnathon sketched a signature dish for the top chef showcase, but every draft felt safe. He needed to test it on real people first, not just in his quiet kitchen. Lexi came in Monday with the answer already in her mouth. "Try it at my store," she said. She set her pink purse on the pass and pulled out her notebook. "Not here. Somewhere new." "Your store sells clothes." "So we bring people in." She flipped to a fresh page and drew fast. A little coupon, split down the middle. "One side, a discount at your bistro. Other side, mine. They come taste the dish. They shop." She tapped the page. "Both places win." Johnathon looked at her plan. It was clean. It was hers. "You'd let food into a boutique?" "My store. My rules." She pushed her glasses up. "That's all I'm saying right now." They printed the coupons Sunday night. Monday morning they set up a small tasting table inside the glossy pink boutique, between the display windows and the racks of clothes. Johnathon plated forty small portions of his showcase dish. Lexi handed a coupon to everyone who walked in. By noon the boutique was full. People held pink shopping bags in one hand and forks in the other. Johnathon watched their faces. He watched the first bite. A woman near the window set her fork down after one taste. She did not finish. Then another. The dish was too much at once, too clever, three ideas fighting on one small plate. He heard someone say it was pretty but hard to eat. His chest dropped. "It's failing," he said low to Lexi. "It's telling you something." She did not sound worried. She grabbed a clean plate. "You drew three dishes. Cook one." He understood. He pulled the lemon element, the one true thing, and built the plate around it. Simple. He plated ten new portions right there on the table. Lexi carried them out herself. This time the forks kept moving. People finished. A man asked what it was called. A woman asked if the coupon worked today. By two o'clock, both coupon halves were gone, and the boutique had sold out its front rack. That night they counted at the bistro pass. The grey cat wound the stool legs. Lexi laid the used coupons in two piles, one for each store. "The first dish failed," Johnathon said. "The second didn't." She slid a plate to him. On it sat the simple lemon version, cold now. "That's your showcase dish. The country will get it in one bite." He looked at the plate. She was right. He had been hiding behind too many ideas. The test had stripped them away. "Then I enter this one," he said. Lexi opened her notebook. "Good. Now we make it perfect. You have until the entry deadline." She wrote the date at the top of the page and underlined it twice.
